Summer Berry Muffins
The summer berries are really tasty and it offers a delicious flavor. It also contains nutrition and color with the berry muffins. They are freshly baked muffins that come straight away from the oven. You can have these tasty muffins for breakfast and you can take in the lunch box. Diabetic patient can easily have these fresh berry muffins and stay fit without compromising in the eating habit.
Ingredients:
- Whole wheat flour 125 ml
- All purpose flour 75 ml
- Baking powder of 15 mL
- Salt to taste
- Blueberries and raspberries of 175 mL
- Light margarine of 25 mL
- Brown sugar of 50 mL
- Beaten egg- 1
- Skim milk- 1 cup
Method of preparation:
- Combine all purpose flour and whole wheat flour will increase the content of fibre. It will add more nutrients to the muffin and will give vitamin of B.
- The fresh berries are very low in fat and they include dietary fibre and also makes a good contribution towards vitamin C. Raspberries also provide flat and cranberries contains a compound that will help you prevent the urinary tract infection.
- Now, you need to preheat the oven at 400ºF. Line up 9 muffin cups and apply cooking spray
- Take a bowl and sift flour, salt and baking powder and then gently fold the mixed berries
- Take a small saucepan and melt the margarine. You need to add egg, sugar, milk and then mix it smoothly. Then pour this mixture in the flour mixture and fold together to that all the ingredients are combined perfectly.
- The mixture should not provide you any lump.
- You should take a spoon and fill the muffin cup with the mixture. Fill it 2/3 full and bake for almost 18-20 minutes. After the bake, the muffins will rise and will become golden brown.
- You need to cool the muffins and keep it in the airtight container for 2 days and enjoy.
Berry muffin variations in Summer:
- You can use all whole wheat flour
- You can add mixed spice, cinnamon, ground ginger of 1 ½ teaspoon into the flour
- You can replace berry with apricot, chopped apple, strawberry, dry fruit, dates and raisins.
- You can reduce the size of muffin to mini level and divide it into small muffin and bake it for 10 minutes
- The preparation time is 10 minutes
- The cooking time is 20 minutes
